this kolache recipe is gluten free and dairy free, but packed with all the flavor
combine 1 3/4 cup gluten free flour, 1 cup unsweetened rice milk, 1/4 cup water, 1/2 cup sugar, and 4 1/2 tsp yeast. mix well
cover. let sit in warm area for 1 hour
add in 2 eggs worth of egg substitute, 1/4 cup unsweetened rice milk, 1 3/4 tsp salt, 2 1/4 cup gluten free flour, and 1/2 cup shortening. mix well and scrape down.
cover. let sit in warm area for 30 minutes (or until doubled in size)
roll dough into golf ball sized balls. pat down
wrap cocktail sausage in American cheese substitute and envelope fold into dough
place envelopes seam side down and brush with egg substitute
bake in 400F oven for 15 min.
